Ingredients
  

Meatloaf
  • 2 lb ground beef
  • 0.667 cup breadcrumbs
  • 2 eggs
  • 0.333 cup whole milk
  • 1 small onion grated
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp Worcestershire sauce
  • 1 salt and pepper to taste
  • 1 pepper and salt to taste
  • 4 bacon slices, cooked and crumbled divided (8 slices total)
  • 1.5 cup cheddar cheese, shredded divided
Glaze & garnish
  • 0.333 cup ketchup
  • 1 tbsp mustard
  • 1 tbsp brown sugar
  • 1 dill pickle chips for garnish

Method
 

Prep & bake
  1. Preheat oven to 350°F and line a loaf pan with foil.
  2. Combine ground beef, breadcrumbs, eggs, whole milk, grated onion, ketchup, yellow mustard, Worcestershire sauce, salt, and pepper.
  3. Press half the mixture into the pan, then add half the cheddar and half the cooked crumbled bacon.
  4. Top with remaining meat mixture and press to seal around the filling.
  5. Mix glaze ingredients (ketchup, mustard, and brown sugar) and spread over the top.
  6. Bake for 60–70 minutes, until internal temperature reaches 160°F.
Rest & serve
  1. Rest the meatloaf for 10 minutes.
  2. Top with dill pickle chips, slice, and serve to reveal the cheesy bacon center.

Notes

For clean slices, let the loaf rest the full 10 minutes before cutting so the cheddar sets. Refrigerate leftovers in an airtight container for up to 4 days; freeze up to 2 months. For a lower-fat option, use 90% lean ground beef and reduced-fat cheddar if you want a lighter take while keeping the burger-style layers.
