Ingredients
  

Beef marinade and sauce
  • 0.25 cup soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp cornstarch
  • 2 tbsp oyster sauce
  • 0.25 cup beef broth
Stir-fry
  • 1.5 lb flank steak sliced thin against the grain
  • 4 cup broccoli florets
  • 3 tbsp oil
  • 6 clove garlic minced
  • 1 tbsp ginger grated
  • 1 sesame seeds for garnish

Method
 

Marinate the beef
  1. Combine 2 tablespoons soy sauce, 1 tablespoon brown sugar, and cornstarch, then mix until smooth.
  2. Add the sliced flank steak and marinate for 30 minutes, turning once so the strips are evenly coated.
Sear beef and cook broccoli
  1. Heat a Blackstone griddle to high heat and add 2 tablespoons oil.
  2. Cook beef in batches for 2-3 minutes per side until deeply seared, then transfer to a plate.
  3. Add the remaining 1 tablespoon oil, then cook broccoli for 4-5 minutes until tender-crisp.
Build the sauce and finish
  1. Add garlic and ginger and cook for 30 seconds until fragrant.
  2. Add the remaining soy sauce, oyster sauce, brown sugar, and beef broth, then stir to combine.
  3. Return beef to the griddle and toss everything in the sauce for 2 minutes until glossy and evenly coated.
  4. Garnish with sesame seeds and serve hot.

Notes

Pro tip: keep the griddle hot and sear the beef in batches so the strips brown instead of steaming. Refrigerate leftovers in a covered container up to 3 days; reheat on a hot griddle or skillet with a splash of water or broth. Freezing is not recommended for the best broccoli texture. For a lower-sugar option, replace brown sugar with a sugar-free alternative that measures 1:1.
