Ingredients

Soup base
  • 1.5 lb ground beef (80/20)
  • 1 onion, diced
  • 4 clove garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 can (14 oz) diced tomatoes
  • 4 cup beef broth
  • 2 tbsp tomato paste
  • 1 tsp Italian seasoning
  • 1 tsp dried basil
  • 0.5 tsp dried oregano
  • 0.5 tsp red pepper flakes
  • 8 lasagna noodles, broken into pieces
Cheese melt
  • 1.5 cup shredded mozzarella
  • 1 cup shredded cheddar or American cheese
Ricotta dollop
  • 1 cup ricotta
  • 0.25 cup parmesan
  • 1 basil
Seasoning
  • 0.25 tsp salt to taste
  • 0.25 tsp pepper to taste

Equipment

  • 1 Dutch oven

Method

Brown and build the broth
  1. Brown ground beef in a large pot over medium-high heat until no longer pink, then drain the fat. Keep it moving so it browns evenly.
  2. Sauté onion for 4 minutes in the drippings until softened, then add garlic and tomato paste and cook for 2 minutes. The mixture should smell fragrant and turn slightly darker.
  3. Add crushed tomatoes, diced tomatoes, beef broth, Italian seasoning, dried basil, dried oregano, and red pepper flakes, then bring to a boil. Look for a rolling boil across the surface before timing the next step.
Simmer and melt the cheese
  1. Add broken lasagna noodles and simmer for 10-12 minutes, stirring occasionally, until tender. The noodles should be soft but not falling apart.
  2. Reduce heat to low, then stir in mozzarella and cheddar until melted and the soup turns glossy and creamy. Stop once no cheese streaks remain.
  3. Season with salt and pepper to taste, then stir to distribute evenly. Taste before serving and adjust the seasoning as needed.
Serve with ricotta dollop
  1. Stir together ricotta, parmesan, and basil, then drop a generous dollop into each bowl. Let the dollop sit on top so it slightly warms without fully sinking.

Notes

Pro tip: drain the beef well after browning so the broth stays rich but not greasy. Store leftovers in an airtight container in the refrigerator up to 3 days; reheat gently on the stove, adding a splash of broth if it thickens. Freezing is not recommended because the noodles and dairy can change texture. For a lighter option, use 93% lean ground beef and reduce the cheddar to 1/2 cup.
