Method
Prep the oven and dish
- Preheat oven to 350°F and grease a 9x9-inch baking dish.
- Visually check the greased dish has a thin, even coating so the casserole releases easily.
Mix the casserole
- Stir together whole corn, creamed corn, corn muffin mix, sour cream, and melted butter until evenly combined.
- Look for a thick, scoopable batter with no dry muffin mix streaks.
Bake
- Pour mixture into the prepared baking dish and spread into an even layer.
- Bake for 40-45 minutes, until golden on top and set in the center.
Add cheese (optional)
- If using cheddar, sprinkle it over the top.
- Bake 5 minutes more, until the cheddar is melted and lightly browned in spots.
Rest and serve
- Rest for 10 minutes before serving.
- You should see the center firm up slightly during the rest for cleaner slices.
Notes
For the best custardy texture, bake until the center is set (not jiggly) and let it rest 10 minutes before cutting. Refrigerate leftovers in an airtight container for up to 4 days. Freeze yes: cool completely, wrap tightly, and freeze up to 2 months; thaw overnight in the fridge and reheat at 350°F until warmed through. For a lighter option, swap sour cream for plain nonfat Greek yogurt and use reduced-fat cheddar if desired.
