Ingredients

For apple filling
  • 6 large apples
  • 0.25 cup granulated sugar
  • 2 tbsp brown sugar
  • 2 tsp cinnamon
  • 0.25 tsp nutmeg
  • 1 tbsp lemon juice
For oat topping
  • 1.5 cup rolled oats
  • 1 cup all-purpose flour
  • 0.75 cup brown sugar, packed
  • 1 tsp cinnamon
  • 0.25 tsp salt
  • 0.5 cup unsalted butter, melted
Serving
  • vanilla ice cream for serving

Equipment

  • 1 slow cooker

Method

Make the apple filling
  1. Toss the sliced large apples with granulated sugar, brown sugar, cinnamon, nutmeg, and lemon juice, then place them in the slow cooker.
Make the oat topping
  1. Combine rolled oats, all-purpose flour, packed brown sugar, cinnamon, and salt, then drizzle in melted unsalted butter and stir until the mixture forms clumps, with a dry-fleck to clumpy texture.
Assemble and slow cook
  1. Scatter the clumpy oat topping evenly over the apples in the slow cooker, keeping it on top without stirring.
  2. Lay a double layer of paper towels under the lid to absorb excess moisture, ensuring it covers the underside of the lid area.
  3. Cook on Low for 2.5–3 hours, until the apples are tender and the topping looks set and slightly firm.
Optional crisp-up and serve
  1. For a crispier topping, transfer the crisp to an oven-safe dish and broil at 500°F (or the highest broil setting) for 3–4 minutes, watching until the top turns lightly golden.
  2. Serve warm with vanilla ice cream, spooning a generous portion so you can see the tender apples under the set crumble.

Notes

For best results, spread the oat topping as an even blanket and resist stirring—this helps the topping set into clumps. Store covered in the refrigerator for up to 4 days; rewarm individual portions in the microwave or at 300°F until hot. Freezing is not recommended for the oat topping texture. For a lighter swap, use reduced-fat butter; the crumble will still form clumps but may brown a bit less under the broiler.
