Ingredients
  

Bone-in chicken thighs
  • 2 lb bone-in chicken thighs
Vegetables and aromatics
  • 4 carrots sliced
  • 4 celery sliced
  • 1 onion diced
  • 8 garlic minced
  • 2 tbsp fresh ginger grated
Soup base
  • 8 cup chicken broth
  • 1 tsp turmeric
  • 1 tsp dried thyme
  • 0.25 tsp black pepper
  • 0.25 tsp cayenne
  • 1 tbsp lemon juice
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey
  • salt to taste
Noodles and greens
  • 8 oz egg noodles
  • 2 cup kale or spinach chopped
Serving
  • fresh parsley for serving
  • lemon wedges for serving

Method
 

Build the broth
  1. Combine chicken thighs, sliced carrots, sliced celery, diced onion, minced garlic, grated ginger, chicken broth, turmeric, dried thyme, black pepper, and cayenne in a large pot or Dutch oven.
  2. Bring the mixture to a boil, then reduce to a gentle simmer and cook for 30 minutes until the chicken is very tender.
Shred and finish
  1. Remove the chicken from the pot, shred the meat, and discard bones and skin before returning the shredded chicken to the pot.
  2. Add egg noodles and cook for 6-8 minutes, stirring occasionally, until tender.
  3. Stir in chopped kale or spinach and cook for 3 minutes until wilted and bright green.
  4. Stir in lemon juice, apple cider vinegar, and honey, then season with salt to taste.
Serve
  1. Ladle soup into bowls and serve with extra lemon wedges and fresh parsley on top.

Notes

For the best texture, shred the chicken while it’s still warm and return it to the broth just long enough for the noodles to cook (overcooking can make the meat dry). Store leftovers in the refrigerator up to 4 days; reheat gently. Freezing is not recommended because the noodles can soften significantly. For a gluten-free swap, use gluten-free egg noodles in the same 6-8 minute cook window.
