Ingredients
  

Chicken soup base
  • 1.5 lb chicken breast or thighs
  • 4 carrots sliced
  • 3 celery sliced
  • 1 onion diced
  • 6 garlic minced
  • 2 tbsp fresh ginger grated
  • 2 cup shiitake or cremini mushrooms sliced
  • 2 cup kale or spinach chopped
  • 8 cup chicken broth
  • 1 tsp turmeric
  • 1 tsp dried thyme
  • 0.25 tsp black pepper activates turmeric
  • 1 tbsp lemon juice
  • 8 oz egg noodles
  • fresh parsley and lemon for serving

Method
 

Simmer the chicken and broth
  1. Add chicken, chicken broth, carrots, celery, onion, garlic, ginger, turmeric, dried thyme, and black pepper to a Dutch oven and bring to a simmer over medium heat. Maintain a steady simmer for 20 minutes until the chicken is cooked through, with an active bubbling broth visible around the vegetables.
  2. Remove the chicken from the pot and shred it, then return the shredded chicken to the soup. Stir until evenly distributed so the broth looks consistent and lightly golden.
Cook mushrooms and noodles
  1. Add sliced mushrooms to the pot and cook for 5 minutes, stirring occasionally. Cook until the mushrooms are tender and their moisture slightly thickens the broth.
  2. Add egg noodles and cook for 6-8 minutes until tender. Keep the soup at a gentle simmer and stir so noodles don’t stick, until they are soft with a slight bite in the center.
Finish with kale and lemon
  1. Stir in chopped kale (or spinach) and lemon juice, then cook for 3 minutes until the greens are wilted. The soup should look darker green at first, then evenly wilted throughout.
  2. Season with salt to taste, then serve immediately with fresh parsley and lemon wedges. The final bowl should have bright lemon aroma and visible herbs on top.

Notes

For best flavor, simmer at a gentle, steady bubble rather than a hard boil so the broth stays clear and the chicken stays tender. Store leftovers in the fridge up to 4 days; freeze up to 2 months (for best texture, freeze without fresh garnishes and consider undercooking noodles slightly, then reheat and finish until tender). For a lower-sodium version, use low-sodium chicken broth and adjust salt at the end to taste.
