Ingredients
  

Chicken
  • 2 lb chicken pieces
Citrus marinade
  • 0.25 cup Key lime juice (or regular lime)
  • 0.25 cup orange juice
  • 2 tbsp olive oil
  • 3 garlic, minced
  • 2 tbsp honey
  • 1 tsp cumin
  • 0.5 tsp salt and pepper
Garnish
  • 0.25 cup Fresh cilantro and lime wedges

Method
 

Make the citrus marinade
  1. Whisk together Key lime juice, orange juice, olive oil, garlic, honey, cumin, salt, and pepper until smooth and glossy.
Marinate
  1. Add chicken pieces to the marinade and coat thoroughly, then refrigerate for 2-6 hours to soak up the tropical flavors.
Grill the chicken
  1. Preheat the grill to medium-high heat, then grill the chicken until it reaches an internal temperature of 165°F with visible char.
Rest and serve
  1. Let the chicken rest for 5 minutes before serving so the juices redistribute, then garnish with Fresh cilantro and lime wedges.

Notes

Pro tip: If your chicken is very thick, grill with lid closed when possible so it cooks through without burning the outside. Refrigerate leftovers in a sealed container for up to 4 days; freeze cooked chicken for up to 2 months. For a lighter option, swap honey for the same amount of maple syrup or a sugar-free honey-style syrup and keep the rest of the marinade the same.
