Method
Prep and preheat
- Preheat the oven to 400°F, and line a sheet pan with parchment paper.
- Roll the puff pastry into a 10x12-inch rectangle, then cut it into 12 strips about 1 inch wide.
Make the filling and wrap
- Spread a thin layer of herb cheese on each pastry strip, then sprinkle Parmesan and black pepper over the cheese.
- Wrap each asparagus spear in a half slice of prosciutto.
Assemble and bake
- Wind a pastry strip in a spiral around each prosciutto-wrapped spear, with the cheese side in, and place the bundles on the sheet pan.
- Brush the pastry with egg wash.
- Bake for 16-18 minutes at 400°F until puffed and deep golden brown, using a clear visual cue of risen pastry color.
Finish and serve
- Finish with lemon zest and flaky sea salt, then serve warm.
Notes
For the best spiral hold, keep the puff pastry strips fairly even and do not overfill—just a thin herb cheese layer. Store leftovers in the refrigerator up to 3 days and reheat in a 350°F oven for 6-8 minutes to re-crisp. Freezing is not recommended for assembled bundles, but you can freeze unbaked pastry strips before wrapping if desired. Dietary swap: use a dairy-free Boursin-style spread and dairy-free Parmesan to make them dairy-free (prosciutto may still contain dairy additives).
