Ingredients

Puff pastry
  • 1 sheet puff pastry thawed
Asparagus
  • 12 asparagus spears woody ends trimmed
Prosciutto
  • 6 slice prosciutto halved lengthwise
Cheese filling
  • 0.5 cup Boursin or garlic herb cheese softened
  • 0.25 cup grated Parmesan
Egg wash
  • 1 large egg beaten with 1 tablespoon water
  • 1 tbsp water for egg wash
Finishing
  • 1 tsp lemon zest
  • 1 black pepper to taste
  • 1 flaky sea salt for finishing

Equipment

  • 1 sheet pan

Method

Prep and preheat
  1. Preheat the oven to 400°F, and line a sheet pan with parchment paper.
  2. Roll the puff pastry into a 10x12-inch rectangle, then cut it into 12 strips about 1 inch wide.
Make the filling and wrap
  1. Spread a thin layer of herb cheese on each pastry strip, then sprinkle Parmesan and black pepper over the cheese.
  2. Wrap each asparagus spear in a half slice of prosciutto.
Assemble and bake
  1. Wind a pastry strip in a spiral around each prosciutto-wrapped spear, with the cheese side in, and place the bundles on the sheet pan.
  2. Brush the pastry with egg wash.
  3. Bake for 16-18 minutes at 400°F until puffed and deep golden brown, using a clear visual cue of risen pastry color.
Finish and serve
  1. Finish with lemon zest and flaky sea salt, then serve warm.

Notes

For the best spiral hold, keep the puff pastry strips fairly even and do not overfill—just a thin herb cheese layer. Store leftovers in the refrigerator up to 3 days and reheat in a 350°F oven for 6-8 minutes to re-crisp. Freezing is not recommended for assembled bundles, but you can freeze unbaked pastry strips before wrapping if desired. Dietary swap: use a dairy-free Boursin-style spread and dairy-free Parmesan to make them dairy-free (prosciutto may still contain dairy additives).
