Ingredients
  

Smashed cheeseburger taco filling
  • 1.5 lb ground beef 80/20 for best juicy crust.
  • 8 flour tortillas Use small tortillas for easy folding.
  • 8 American cheese Slice for quick melting.
  • 0.25 cup butter Melted for toasting tortillas.
  • 0.5 cup shredded lettuce
  • 0.5 cup diced tomatoes
  • 0.25 cup diced onions
  • 0.25 cup pickles, chopped
  • 0.25 cup special sauce mayo, ketchup, mustard mixed.
  • salt and pepper to taste Season beef and adjust to preference.

Method
 

Prep the beef and sauce
  1. Form the ground beef into 8 small balls and season with salt and pepper.
  2. Set out toppings and the special sauce (mayo, ketchup, mustard mixed) so assembly is quick.
Toast tortillas and smash burgers
  1. Heat a griddle or large skillet over high heat and brush tortillas with the melted butter.
  2. Place tortillas on the hot surface and put a beef ball on each, then smash flat with a heavy spatula.
  3. Cook for 3-4 minutes until the beef develops a crispy crust, then flip tortilla and beef together.
  4. Immediately top with American cheese and cook for 1-2 minutes until the cheese melts.
Fold and assemble tacos
  1. Remove from heat, fold each taco, and fill with lettuce, tomatoes, onions, pickles, and special sauce.

Notes

Pro tip: smash firmly and keep the heat high so you get browned, crispy edges before flipping. Store leftover cooked beef and toppings separately in the fridge up to 3 days; reheat beef/tortillas on a skillet for best texture, then assemble fresh with sauce. Freezing is not recommended because the tortillas soften and the toppings lose crunch. Dietary swap: use 1:1 ground turkey (or plant-based ground) to reduce red-meat intake while keeping the same smash technique.
