Ingredients

Beef base
  • 1.5 lb lean ground beef
  • 1 onion diced
  • 4 garlic minced
  • 28 oz crushed tomatoes 1 can
  • 14 oz diced tomatoes 1 can
  • 4 cup beef broth
  • 2 tbsp tomato paste
  • 1 tsp Italian seasoning
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 0.5 tsp red pepper flakes
  • 0.25 tsp black pepper
  • 8 lasagna noodles broken into pieces
  • 0.5 salt to taste
Cheese dollop
  • 1 cup ricotta
  • 1 cup shredded mozzarella
  • 0.25 cup parmesan
  • 1 fresh basil for serving

Equipment

  • 1 Dutch oven

Method

Brown the beef
  1. Brown the lean ground beef in a large pot over medium-high heat until cooked through, then drain the fat. You should see crumbled beef browning with some rendered juices disappearing, about 5–7 minutes.
Sauté aromatics
  1. Sauté the onion in the same pot for 4 minutes until softened. Add the garlic and tomato paste and cook for 2 more minutes, stirring until fragrant and darker.
Build the tomato broth
  1. Add the crushed tomatoes, diced tomatoes, beef broth, Italian seasoning, dried basil, dried oregano, red pepper flakes, and black pepper to the pot and bring to a boil. The surface should show steady bubbling across the entire pot within 3–5 minutes.
Cook the lasagna noodles
  1. Add the broken lasagna noodles, then reduce heat to a gentle simmer. Simmer for 10–12 minutes, stirring occasionally, until noodles are tender and the soup thickens slightly.
Season and serve
  1. Season with salt to taste and stir occasionally to prevent the noodles from sticking. The soup should taste balanced with visible noodle pieces throughout.
Make the cheese dollop and serve
  1. Mix the ricotta, shredded mozzarella, and parmesan into a thick, spoonable dollop. Serve each bowl with a very generous spoonful and top with fresh basil.

Notes

For best noodle texture, keep the soup at a gentle simmer (not a hard boil) once the noodles go in, and stir every couple minutes during the last 5 minutes to prevent sticking. Refrigerate in a covered container up to 3 days; reheat gently on the stove until hot. Freezing is not recommended because the noodles can soften further after thawing. For a lighter option, use leaner ground beef (or swap to ground turkey) while keeping the cheese dollop size the same.
