Ingredients
  

Fruit base
  • 5 peaches Ripe, pitted and sliced
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 cup strawberries Hulled and sliced
  • 1 cup watermelon Cubed
Honey-lime mint dressing
  • 3 tbsp honey
  • 2 tbsp lime juice Fresh
  • 1 tsp lime zest Fresh
  • 0.25 tsp vanilla extract
  • 1 fresh mint leaves For garnish

Method
 

Slice and combine the fruit
  1. Slice the peaches and place them in a large serving bowl with the blueberries, raspberries, strawberries, and cubed watermelon.
  2. Gently toss the fruit just until the peach slices and berries are evenly distributed through the bowl.
Make and coat with honey-lime dressing
  1. Whisk together honey, fresh lime juice, lime zest, and vanilla extract until smooth.
  2. Drizzle the honey-lime dressing over the fruit and gently toss until every piece is lightly coated, with a glossy sheen.
  3. Taste and add more honey or lime juice as desired for a sweeter or more citrus-forward balance.
Chill and garnish
  1. Refrigerate the salad for 20 minutes so the flavors meld and the fruit chills through.
  2. Garnish with fresh mint leaves just before serving for bright, fresh color and aroma.

Notes

For the best texture, chill the salad in a covered container and give it one gentle toss after 10 minutes to recoat any juices that have pooled at the bottom. Storage: refrigerate up to 2 days; it’s not ideal to freeze because berries and watermelon soften after thawing. Dietary swap: use maple syrup in place of honey for a different flavor profile while keeping the same citrus dressing.
